Newsweek recently printed an article on how maple syrup and pancakes consumption could be affected by global climate change. The sugar maple is a very delicate tree, despite its very hard wood for furniture making but registers air pollution and warming trends very much, to our alarm.

We love this beautiful tree, and just not for its providing outstanding orange-gold tones in fall foliage time. We delight in its maple syrup collected every spring.
