onions

With soil rich in organic matter, regular cultivation and consistent moisture, onions produce a consistent crop, but need to be planted as soon as the soil can be worked in early spring. (ANN BENNETT PHOTO)

Vegetable favorites come and go in the gardening world, catching the fancy of home growers and chefs for a time, and then passing out of favor. But others have nailed down their place as cornerstones of the garden plan. Think tomatoes, lettuce, potatoes, cucumbers, squash, beans.

And onions, an unassuming crop and often taken for granted. But few cultivars claim roots as ancient, or have as essential a place in the kitchen. Archeologists and food historians disagree on whether onions originated in central Asia or Iran and Pakistan, but there is concurrence that their use predates farming. Onions were a foraged staple across the globe, and eventually domesticated. Ancient writings document their presence in Chinese gardens 5000 years ago.
