Maple month doesn’t come until March, but most of the people we know who collect and boil sap are already out in the woods checking their lines. In anticipation of a 6 week long, plus or minus, active maple season, it’s never too early to be ready for that first warm day, followed by a cold night.

Maple syrup, and all the delicious variants of maple sugaring production, is in my view, one of the most remarkable examples of how nature simply provides. All it requires is a bit of work on our part, and the magic appears. We are lucky to live in a part of the country where there are still ample maple groves, or sugar bushes, as they are more commonly known. And just to our north in Canada there are so many maple trees that since their 1967 independence from Britain, the maple leaf adorns their flag. Now there’s a country that sees things right.
