CONWAY — The food truck trend has finally parked itself in the Mount Washington Valley.

Although its roots date back to 1691 with the street vendors of New Amsterdam (New York City), followed by the chuck wagon in 1866, the ice cream trucks of the 1950s and 60s, it wasn't until 2008 that the mobile food shop was born. It was then that Korean-American chef Roy Choi rolled out his Koji Korean barbecue tacos and the concept of kitchens on wheels exploded.
