“Got your peas in?” is a springtime refrain among local gardeners, some of whom jump hurdles to have their harvest on the table first. One method is to pre-sprout seeds and plant as soon as the soil can be worked, adding hoops and a plastic row cover to speed germination. And then there was the fellow who used a hand drill to be the first to plant, though the soil temperature was so cold the peas emerged belatedly, weeks later.  

Whatever the method, peas — whether edible podded or shelling varieties — are ready for harvest here in the first weeks of July. Not only are they among the earliest crops to make their way to the table, peas are both a culinary treat and a nutritional powerhouse.
