It's stinking hot, and nothing makes this beer writer gag right now more than the mere mention of an imperial stout. I'm all about seeking refreshment, and I'm not ashamed. This summer, we're experimenting with beers with added fruits and other unique ingredients, and I've saved some of most refreshing for this brutal stretch of warm weather. Limes have less citric acid than lemons, but more than oranges, leaving them somewhere between the two in terms of sourness. They are endowed with a mixture of diverse and subtle essential oils and terpenes, making their fragrance more complex and subtle than other citrus fruits. For some magical reason, limes enjoy a special synergy with salt. All of these lime beers are a variation on the gose style of beer, which incorporate both a sour mash and generous additions of salt to augment their flavor. Cheers.
