Raspberries, in my opinion, have the most delicate, ephemeral of flavor of all berries. Jewel-like in their arrangement, each berry is actually a cluster of multitudes of individual fruits, called “druplets.” The flavor of a raspberry is due largely to complex organic molecules known as ketones and anthocyanins, each of which are being investigated for promising effects on human health.
