To The Editor:

As bird flu spreads to cows in Texas and Idaho, forward-thinking politicians should support a massive infusion of state and federal funding into cultivated-meat research. For those who don’t know, cultivated meat is grown from livestock cells, without slaughter. Besides the animal-welfare and environmental benefits, the new protein offers public health advantages, as well. Since livestock are removed from the process, the risk of zoonotic diseases making the jump to humans would be greatly reduced.
