Walk Away Roast Chicken

Gould Acres Farm is bringing fresh chicken to the Bridgton Farmers’ Market this weekend, and I can’t wait to roast one of these tasty birds. Fresh farm raised chicken is a special event at the Bridgton Farmers’ Market and this is one of my favorite recipes. There is something about the mustard and herbs rubbed inside and out, generously all over the bird that makes this dish outstanding. You don’t need to use only onions and potatoes around the chicken while it is cooking. I use whatever I have in the fridge, yes, onions for sure, but carrots or parsnips can be added or used in addition or instead of potatoes.

Once you get the chicken in the oven, the only other thing I do is to turn the roasting pan, rotating the pan from front to back, halfway through cooking. That’s it. My chicken comes out so tender and juicy that I don’t bother to make the pan sauce, but if I were serving this for company, I would do so. Serve with a simple spring green salad or sautéed greens and you have a wonderful and delicious meal.
